I had my first taste of kangaroo and sticky date pudding several years back at Eight Mile Creek, a now defunct, Australian restaurant in NYC. No vegan lives here and I enjoyed the kangaroo, but I loved the sticky date pudding. This recipe is the closest version I could find to Eight Mile Creek’s and it did not disappoint.
